Costa Rican style tacos. (Tacos Ticos)

Tacos are a well known food everywhere in the world, we all love them and is an easy and delicious meal.
In Costa Rica, the tacos are not made like the Mexican tacos, these are rolled, fried and accompanied by cabbage with mayo and ketchup.
My mom made some good ones the other day and I took some pictures so I can show you the process.

Cook Time: 2 hours, 30 minutes

Tacos ticos

Ingredients

  • 3-4 pounds beef roast.
  • 20+ Corn Tortillas (I use the big ones, if you can't find those, small ones will work as well)
  • 2 Cabbages.
  • Oregano.
  • 3 Garlic cloves.
  • Salt.
  • Mayonnaise, for serving.
  • Ketchup, for serving.
  • Vegetable oil.
  • Optional Ingredients:
  • -Lizano Sauce., for serving
  • -Guacamole.
  • -Cheese (For melting, like mozarella)
  • -Refried beans.

Instructions

    For the meat:
  1. In a pot, put the roast and fill with water until covers it.
  2. Boil the roast with oregano, garlic and salt.
  3. Bring to boil and simmer until is tender.
  4. Once done, shred the meat and reserve.
  5. For serving:
  6. Shred cabbage and reserve.
  7. For the tortillas:
  8. No matter if they are home made or store bought, they need to be put in heat to make them soft to be able to roll them.
  9. Now, let's make some tacos:
  10. Place the tortilla in a plate or a cutting table, add shredded meat on one of the ends of it.
  11. Roll the tortilla and press it when is done so keeps its shape.
  12. On a skillet, pour 1 inch of vegetable oil and when is hot (like really hot!), put the taco in and leave it until is golden (you might have to turn them if don't want to use a lot of oil).
  13. Use thongs to get it out of the oil. (safety first!)
  14. Place the fried taco in a paper towel to get rid of the excess of oil.
  15. Now, set the taco on a plate, add some shredded cabbage with mayo, ketchup and Salsa Lizano if you feel like an extra Costa Rican flavor.
  16. Enjoy!
  17. Optional:
  18. You can add cheese when rolling the tacos. Also can add refried beans inside or outside of the taco.

Carrot & chia cake.

I started baking maybe 2 years ago, I took a class to make sure I knew the basics (and don’t blow the kitchen up). After that,  I bake a little bit here and there, and I make a lot, one of my favorites of all times: Carrot cake.
Although I must say, for me is easier to bake in this individual silicon molds/liners, because make it easier to serve, clean the liners (silicon rocks!), and I can have a better control of portions.

Ingredients:

  • 4 eggs.
  • 1 1/2 cup sugar.
  • 1 tsp vanilla extract (optional).
  • 1 1/2 cup all purpose flour.
  • 1 cup vegetable oil.
  • A pinch of salt.
  • 2 tsp baking powder.
  • 2 tsp ground cinnamon (optional).
  • 2 cups grated carrot.
  • 2 tbsp Chia seeds (optional)

 

Directions:

  1. Preheat oven at 350° F
  2. Whisk the eggs in a bowl until they look fluffy.
  3. Add sugar and flour, alternating with the oil, keep whipping. If you want you can pre-sift the flour with the baking powder, in this case I didn’t do it so that is why you can see ´holes´ in the cake. You don’t actually have to sift it the ¨traditional¨ way but you can aerated the flour just using a whisk or a wooden spoon.
  4. Add the grated carrot,then the chia seeds (also the vanilla and cinnamon if you are using them), all of these, without stopping whipping the mix.
  5. Pour the mixture in the molds and bake for 30 minutes at 350°F.

The good thing about this recipe is that you can add other ingredients (like nuts) and have from one batch, different flavors.

Mine are not perfect, but practice makes perfect, or like we say it in spanish:  ¨La práctica hace al maestro¨. 😉

Easy gummy ‘LEGO’ candy recipe.

I got some cool ‘Lego’ silicone molds to make gummy candy for my son who just discovered them, I have researched some recipes (my next batch will be made with real fruit), and I use this one because it was super easy to make and I already had what I needed in my pantry.

Ingredients:

  • Cold water.
  •  1 tablespoon unflavored gelatin (15 ml).
  • 1 package of flavored gelatin (85 gr).
  • Cutting board.

Directions:

  1. Sprinkle the unflavored gelatin over 1/2 cup of cold water (125 ml). Use a container that can be microwaved.
  2. Wait 5 minutes  (It will  be completely dissolved).
  3. Stir with a fork.
  4. Pour 1/4 cup cold water.
  5. Stir again.
  6. Put the container in the microwave for 1 minute on HIGH.
  7. Take it out of the microwave (it should be hot) and add the flavored gelatin mixture.
  8. Stir again, make sure you stir very well. (Don’t forget to check the bottom of the container).
  9. Place the molds on top of a cutting board so is easier to carry to the fridge once you are done.
  10. Fill the molds.
  11. Put in the fridge for 4 hours (Check after 2 hours, it might be ready by then).

Is an easy recipe, so next time I will do it with real fruit.
